You can but it's better to leave them until you're happy that the new version is working properly and all your existing soundpools, instruments and other compatible features are accessible in the new version

Just to add to what @Graham-Hawker has written: unless you wish to regain hard drive space, there is no need at all to uninstall any of your older versions. They can all co-exist quite happily.
