When finished converting a vinyl recording how do I change the file destination from the one furnished, which appears to be a default. to a one I choose?

I think every version of Sound Forge (Audio Studio and Pro) is the same (except for the unique Audio Studio-12) .
You can choose a different destination in "Options> Preferences> General" menu. At the bottom of the menu find: Temporary files and record folder" and click the "Browse" button to change the location..
.. If I recall correctly, the factory default destination is C:\Users\your user name\AppData\Local\MAGIX\SOUND FORGE (AS or Pro) \ version # .
btw, AppData is a system folder and is usually hidden.
