I've read, I've studied and i've got completely lost in statistics but it does look as though ARC is tha the way for me - at the moment (anyone know an inexpensive carpet supplier?).

The 16gb card is nowhere to be seen in the UK, even those that import can't seem to get them.

Now for what is probably the most stupid question ever been asked on this forum.

I can find lots of 8gb ARCs. Apart from the obvious, what in the real world does the lower amount of RAM make?

For photo editing I have found more vram useful but that may be program dependant. If you are not editing 4K footage or 10 bit video files I would think not a lot. A lot depends on the types and sizes of files you work with (Mb/s) as far as I can tell. A.I. use would probably also benefit from more vram. You should really look at the last video I posted. If you run your cursor along the chapter markers you will see which bits may be relevant to your situation.

About a month before Christmas there were a few A770s to be had on UK websites. B&H for the A770 in the states can import goods for you but there would be added import taxes. I have used them in the past. Here is Computer magazines review on that card. There have been new drivers released since that review.
