Is it possible to sort by the date taken within each category? Also, I cannot find where the PDF Manual can be downloaded.

I do not believe there is a pdf manual for this software, sorry. However, the option under Help>Online tutorials will give you a lot of information.
As for sorting by date, first make sure you are running in Advanced Mode (there is a tick-box towards the upper right hand corner of the main screen). Then in the left hand column that now appears choose "Calendar". Then you will see something that looks like this:
As you will see, photos are now grouped by year taken. Under each year (click the +) you will find the months; click on a month you will see each day when you took a photo.
