"What am I doing incorrectly?"

We don't know...

Yamaha makes a TON of different keyboards (and many more over the years).  You could start by telling us WHICH keyboard you're asking about.  It doesn't do any good to make us guess.

Did the keyboard come with a disc with drivers on it?  Is it installed?  Is the keyboard chosen as the MIDI input device on your computer. (And, from what little you've said, we have to ASSUME you're trying to use it as a MIDI controller via USB.)

Hi

Not using the midi out of the keyboard is the problem.

You need a midi to usb converter for this if you do not have one and it must also be a low latency converter otherwise you will have problems.

Also read this   http://www.magix.info/uk/how-to-solve-latency-problem.online-training.130215.html

The model number of the keyboard is on the label on the back or underside of the synth.

On most models I have seen it is also on the front panel - usually above the keys on the right hand side .

At that price I would guess it is the YPT220 - can you confirm this?

There, you see, I would have thought it might be one of the Yamaha keyboards with a USB port.  At least until I looked up the Rocksmith cable.

The Rocksmith cable is intended to connect a (mono) guitar to a gaming system. It may work well enough to connect your guitar to your computer, but as John mentioned, it's possible there may be a latency issue.  The (head)Phones (audio) OUT on this keyboard is a stereo source and requires a cable with a stereo (TRS  - tip-ring-sleeve) plug.

Since it is your intent to use both instrument and MIDI sources, I would recommend that you invest in a decent USB/Audio-MIDI interface.  If that is not in your immediate budget, a simple USB-MIDI converter/cable (MIDI only) may suffice in the short term.
