There is no option to do this while playing, You can just change it after recording.

It's not as it's a bug. Music Maker is a basic DAW and I imagine there are other features found in more fully featured DAWs that it doesn't have. And as mentioned you can adjust velocity after recording.

In addition to what @SP. and @Graham-Hawker have written, it is usually the case that this setting can be turned off on your keyboard so the data is never transmitted to MM.

Not with the cheaper keyboards. It can't be done in the Akai or my Novation Lauchkey Mini. In the more expensive Launchkey it can be turned off or the velocity curve changed.
