I have MMM premium 2016. When I select strings from Loops - Score-Dramatic Stories and play it on my midi controller, all I hear is a piano. How can I record the Loop sounds? Windows 10.

Hi,

I'm not sure what you mean. Loops are Soundpool loops and are pre-recorded audio or midi files. You don't record them. To record using your midi keyboard/controller, you have to select an instrument first. Then play.

Did you set up your keyboard under Program settings, Audio/Midi, Midi - Input device?

I suggest that you watch this tutorial on getting started in MMM. I think that I showed how to record midi.
