Could someone explain how to create a travel route from Phoenix to Seattle to Seoul to Bankok...I can't seem to get it to work.

I assume the problem you are having is the connection from Phoenix to Seattle is OK as shown below:

then going the wrong when you add Seoul

There is no way I have found of how to stop this - it also occurred in the previous version of the Travel route animation.
