Can you provide a little more information about your setup? What software and video capture hardware are you using? What country are you in (i.e. are you using PAL or NTSC video mode)? How is everything connected?
On thing right away: If you're using a European video recorder with a SCART output and suitable adaptor, make sure to use the Composite video connection (single RCA plug, usually color-coded yellow) rather than the S-Video connector (4 pin mini-DIN plug) to transfer the video signal. Most SCART connections don't support S-Video and you will only get the luminace, resulting in black & white display. If that doesn't do the trick, please post again and provide the details I asked for above. Then this might be a driver setting which can be resolved on a software level.
