If you want a final result of 700 to 800 MB/hour files that you want to e.g. store on your hard drive, you'd already have to go for something in the order of MPEG-4 (e.g. DivX/Xvid) or WMV compression. So, since you're not going for MPEG-2 compression in the end anyway, I'd do the analog capture into MXV format (at maximum resolution/quality settings) in the first place. Then, after doing your trimming/editing and whatever is necessary, export the project via the "File" menu => "Export movie" to a suitable format, as discussed above. For AVI export, you will have to make sure that the codecs you want to use are installed on the system.
