how much ram memory do I need to record 8 tracks at once?

First you need the hardware to do that. In terms of RAM, you need as much as you can get. 2GB is enough, 4GB is good, 6GB is better.
But you need hardware that allows you to do 8 i/o in the first place, it will have its own system resource requirements as well.
