If you're already using a Composite connection, the problem is most likely with the settings of the driver for the video capture device. It's probably defaulting to the wrong video standard. You can access these settings through the program and adjust them, though. Here's what you need to do:
Go into the analog video recording dialog. Choose the correct audio and video drivers and set up all parameters as desired. Now click on the "Advanced..." button to bring up the advanced settings for the video capture driver. In the resulting dialog, click the "Display" and "Format" buttons and make sure that the video standard is set to PAL (PAL_B) in each window. Confirm the settings and try capturing again. That should do the trick.
The device you mention doesn't really use composite but component video. Composite video uses a single RCA jack while component video uses three separate jacks (like the device you use). Component video performs a signal-splitting function similar to RGB separation. It creates a signal called luminance (Y) or Black and White, and 2 other signals called chrominance (Cb and Cr or Pb and Pr). The latter work together to approximate the original RGB signal.
My guesses:
a) The jacks were not firmly attached
b) broken cable
c) a wrong adjusted switch/button/video mode (never underestimate these)
d) the device is faulty
If possible eliminate the obvious possibilities and try to see if another similar device will work with your camera, or if the same device will work with another camera
